Harvested in the cool darkness of night, this Pinot Gris is crafted from the distinctive grey blue to copper-pink berries that give the variety its unique character.
Pear and white apple aromas with delicate floral notes of blossom.
Palate
Elegant and refreshing, showcasing flavours of white nectarine, pear, lime, and a hint of honeysuckle. A delicately spicy finish adds further charm and complexity.
Food match
Raw fish, shellfish, or mild cheeses such as fresh mozzarella with basil and tomatoes.
Winemaking
Fruit harvested warmer than usual without sulphur in the vineyard. Lightly pressed, using only free-run juice. Juice settled cold for a week, then racked and yeast added. Fermented for 7–10 days and kept cold afterwards.
