Winemaking
Limited to just 100 dozen, this is 100% Pinot Noir. The base is 80% 2022 and 20% 2023 vintages. The base wine was handpicked, whole-bunch pressed and fermented in tank over the course of two weeks. After that, the wine was racked off gross lees and left to rest in tank for 12 months. It was then clarified and placed on tirage in November 2023. It was then disgorged and liqueured in October 2026, ready for enjoyment!
