Harvested late into the night to preserve freshness and fruit purity, this Chardonnay is predominantly tank fermented to showcase its vibrant tropical fruit character. A subtle influence of French oak (17% new) adds texture and complexity.
Fresh citrus and peach aromas complemented by gentle notes of toasted hazelnut.
Palate
Bright and expressive, with lively acidity and a subtle mineral edge that provides a long, satisfying finish.
Food match
Crab cakes or a creamy spring vegetable risotto.
Winemaking
Early morning hand/machine harvest, gently pressed and fermented slowly and cool in French oak. No enzymes used during settling to retain high turbidity and texture. Matured 8 months in oak, followed by 6 months in tank.
